Sunday Brunch

Today I'm going to write about breakfast/brunch. Every weekday, breakfast is sort of a hurried thing. Sure, we sit down and have it, but it's mostly something like cereal and toast.
Sundays, though, are a different story. We like to sleep in then have a nice brunch. Here are a few of my favorite things to cook on those lazy days . . .

Breakfast Bake? <-- I guess that's a good name

This is pretty much a variation of this recipe. Instead of one egg, I use three. Instead of 2 tbs. of milk, I use 5. I use 6 slices of bacon instead of the whole package. I don't use green onions at all, and I pour a little bit of maple syrup right before serving. I love this recipe! It's quick and tasty!

Quinoa Pancakes with Blueberry Sauce
I cook 1/2 cup of quinoa in 1 cup of water. When it's done, I add the quinoa to pancake batter (whatever pancake batter you already use, from scratch or not, I'm not judging) then make pancakes like usual.
In a saucepan, I simmer 1 cup of maple syrup and 1 pint of blueberries. Let them simmer and the blueberries start bursting. Pout the syrup over the pancakes. Serve with a dollop of Greek yogurt and yum, yum, yum.

Banana Eggs
I thought this one was gross, but the kids love it! Take 3 eggs and one banana and mix it in a blender until smooth. Then just cook the eggs in a skillet like you would cook scrambled eggs. The kids like this with toast. SUPER easy and honestly, it's not as weird as it sounds.

    I have a yummy french toast casserole recipe I'll share with you. We also do pancakes a lot (gonna by buy quinoa to add, now!). I love French toast but I'm terrible at making it (hence, the casserole). We also like egg/toast... toast with a hole in it with the egg cooked in.

  2. That breakfast bake looks dang good. We like to do crepes at my house with lingonberry sauce from Ikea, blueberry pancakes and also puffed apple pancakes.
